Maple Glazed Bacon
1 lb of your favorite bacon, we suggest Vande Rose Bacon
1/4-1/3 C maple syrup, we suggest Runamok Maple Syrup
Preheat oven to 400 degrees. Arrange bacon in a single layer on a parchment-lined rimmed baking sheet – it’s OK if it overlaps a little as it will shrink during cooking. Place into the pre-heated oven and until fat is rendered and bacon is beginning to brown, 15 to 18 minutes, flipping once to help it cook evenly. Meanwhile, line a second baking sheet with foil and then parchment paper. The bacon is ready to glaze when it is almost fully rendered – about 80% “done”. Remove the almost done bacon from oven and transfer the slices onto the clean parchment/foil lined pan – no overlapping this time. Drizzle or brush each slice generously with the maple syrup. Return the bacon to the oven and cook until bacon is browned and the maple sugar is forming large bubbles (the syrup on the pan will no longer be watery/runny), 3 to 5 minutes. Remove the glazed bacon from the oven and allow it to cool for a few minutes, then use tongs to transfer it to a wire rack. Serve warm or cool completely and pack airtight for a decadent gift.
While all bacon is delicious glazed with maple syrup, thicker cuts will retain some chewiness while a thinner slice will be crispier – try them both and decide which you like best. Either way, they will disappear as fast as you make them!
