Garlic, Herb & Citrus Grilled Dry Day Boat Sea Scallops
1 lb. Balducci's dry day boat scallops, cleaned and patted dry
2 cloves minced garlic
2 T. Balducci's fresh mint, minced
2 T. lime juice
2 tsp. orange zest
1 tsp. lemon zest
¼ tsp. salt
¼ tsp. black pepper
⅛ tsp. cayenne pepper
2 T. Balducci's organic olive oil
Add the garlic, mint, lime juice, orange and lemon zest, salt, pepper, cayenne pepper and olive oil to a glass bowl. Do not use a metal mixing bowl, it will react with the acid from the fruit. Stir to combine.
Add the scallops and marinate for 30 minutes in the refrigerator.
Preheat the grill to 500°F.
Remove the scallops from the marinade and place directly onto the grill grate.
Grill for 1 minute and turn the scallops over and grill for 1 minute more.
Remove the scallops from the grill and serve immediately.
