Blackened Yellowfin Tuna Tacos
4 (6 ounce) yellowfin tuna fillets
2 Tablespoons blackening seasoning
2 large garlic cloves
½ cup mayonnaise
1 chipotle pepper in adobe sauce
1 Tablespoon freshly squeezed lime juice
4 cups shredded Napa cabbage
¾ cup shredded carrots
½ cup minced green onions
8 flour or corn tortillas, warmed according to package
Preheat the grill to 450° degrees.
Add the blackening seasoning to a shallow bowl, press each tuna fillet into the bowl and coat on one side with the seasoning.
Place the tuna directly onto the grill and grill for 1-2 minutes per side. Remove from the grill and let rest.
Add the garlic to the bowl of a food processor fitted with the steel blade and process until minced.
Add the mayonnaise, chipotle pepper, and lime juice to the bowl and process until combined.
Add the cabbage, carrots, and green onions to a mixing bowl, add the dressing and toss to coat.
To serve the tacos, cut the tuna steaks into 1-2 inch pieces and place desired amount into a tortilla, top with the slaw and serve with lime wedges.
