Aceto Balsamico di Modena
For three generations, the Barbieri family of Modena has been producing Del Cristo Aceto Balsamico Tradizionale (genuine balsamic vinegar). Made according to historic family customs and conforming to strict D.O.P. guidelines, Del Cristo Balsamico is masterfully crafted, from start to finish. Each year the family harvests the grapes from their own vineyard, cooks the unfermented grape juice (the "must") over an open flame and carefully filters and rotates the concentrated vinegar from one increasingly smaller wood barrel to the next. These casks are stored in a vinegar loft (called an acataia) where for twelve years, the vinegar continues to grow more complex.
