Sourced from vineyard sites in Lodi, Sacramento Delta and San Joaquin areas in California, the dry Mediterranean climate concentrates the ripe berry character found in the California heartland. This Cabernet Sauvignon has lively plum flavors. Oak highlights the mid-palate and finishes with vanilla and toasty notes.
The tannin structure makes this a great pairing with well-marbled cuts like Prime Ribeye
CHEESE PAIRING: Ossau Iraty, 5yr Aged Gouda, Danish Blue
Coming primarily from California’s central coast (Santa Barbara), it is a crisp wine, with a citrus backbone. The heat of the Sacramento Delta provides definite richness and a tropical flair to each vintage of the Lodi grown grapes. This Chardonnay has notes of delicate pear, crisp apple and a creamy finish.
Crisp and citrusy, we love this chardonnay with simply prepared foods like baked halibut or lobster.
CHEESE PAIRING: Bucheron, Brie, Delice de Bourgogne
Primarily sourced from vineyards sites in Santa Rita Hills and Santa Barbara County, this is a lushly styled Pinot with a nose of bright red fruit and earth and a full-bodied palate of dark berries and soft tannin.
A Pinot that falls on the “bigger” side of the spectrum, it still follows the dictum- Pinot Noir goes with everything! Try with Duck or game birds, casseroles and, of course, beef bourguignon.
CHEESE PAIRING: Epoisse, Vacherousse d’Argental, Port Salut
Velvety black in color with deep red hues. Offers aromas of Royal cherries, cedar, blueberries, plum pits, dark chocolate, and hints of herbs. The palate is full bodied and brightly flavored with loads of fruit, nice soft tannins, and velvety, soft texture that begs to be paired with roasted or grilled meats.
Primarily Merlot and Cabernet from California Santa Barbara and California’s Central Coast.
The low tannins (from Merlot) make this a great pairing for lean cuts like filet mignon
CHEESE PAIRINGS: Camembert, Gruyere, Cantalet
Medium bodied and well-balanced with a round, juicy texture, the palate presents pear, peach and fresh tart apple flavors, complemented by a lingering, bright finish. Exceptional California Sauvignon Blanc
Dynamite Sauvignon Blanc like this calls out for oysters, light fish like sole, herbal, briny sauces and anything goat cheese related.
CHEESE PAIRING: Drunken Goat, Coupole, Crottin Chavignol
