You're stumbled across something very special here, since white shrimp (Penaeus setiferus) are the standard by which other species of shrimp, both imported and domestic, are usually measured. This is largely due to the white shrimp's firm yet tender texture and sweet flavor.

Our white shrimp are caught wild and harvested from the shore waters of Florida. In our opinion this is the only way to enjoy shrimp; wild-caught shrimp have that strong, distinct flavor associated with shrimp because they've had a richer diet of seaweed and crustaceans, as well as the chance to swim freely. Fortunately for your taste buds, they are available year round.

Appearance:
While all gulf shrimp are a grayish pink, cooked white shrimp will have shells with a pinkish red hue and pearly white flesh with pink and red shadings.

Cooking:
Because of the firmer texture, white shrimp can be breaded and fried, stuffed, or even barbequed. Be sure not to overcook, as this will toughen the meat.
