Careful Raising Means Delicious Eating
Chinook Salmon (called "King Salmon" in some areas) is one of five breeds of pacific salmon and is the official state fish of Alaska. The Chinook is also one of the most important breeds to commercial and sport fishing. Being one of the largest salmons, the Chinook has a high oil content, which means that the meat is richer and fattier than some of its smaller counterparts (see my tips on preparing salmon and halibut).
For Thanksgiving, your Balducci's seafood feature is farm-raised Atlantic Chinook from the Creative Salmon Company. These fish have been raised on the best quality feed and have been given lots of room to live in a low-stress environment. In addition, the salmon's diet is free from hormones, antibiotics, and malachite green. What you get, then, is an all-natural, carefully raised salmon, and the meat speaks for itself! Thick, with a fresh, mild flavor.
Aside from its wonderful flavor, there are the undeniable health benefits. Farmed Chinook are full of polyunsaturated fatty acids, which are "good" fats that help to prevent heart disease and inflammatory diseases. Creative Salmon's Chinook also cook easily and are highly versatile.
While planning your next fall dinner, stop by the Seafood department and pick up some Chinook salmon.
