The Food Lover's Class of Potato

This month, we are featuring a very special type of potato, just in time for the holidays. The Cinacia brands of fingerling potatoes are particularly unique because they are certified organic, as well as harvested and packed by hand. Cinacia fingerlings are grown at 7,000 feet in the San Luis valley of south central Colorado, where the thin air and fertile soil produce some of the best fingerling potatoes we've ever tasted. The short, narrow, somewhat stubby breed of potatoes may have a simple appearance, but they are blessed with a complex flavor and texture that you won't find in most other types of potato. The fingerling's firm, waxy texture and buttery, earthy flavor makes it a perfect choice for salads and roasting. Be careful not to add too much seasoning, however. Its delicate combination of flavors should not be drowned in butter, sour cream, or any of the other condiments that are commonly used to flavor the starchier, less distinctive types of potato.

Aside from its impressive taste and texture, the fingerling is also highly nutritious. Because they are lower in starch, fingerlings are considered a healthier carbohydrate. The skins are a great source of fiber, potassium, vitamin C, and other necessary minerals. That's why you should always leave the skins on when cooking. The flavor is actually better that way as well.
