Dating back to Norse and Roman winter celebrations, the ham is a traditional dish for the Christmas holiday: baked to rosy-red doneness, glazed sweet and shiny. Everyone at the dinner table breathes a collective sigh of delight-it's going to be a delicious Christmas dinner!
When we created our ham entree for the holidays, we wanted it to burst with flavors, because this is a most special time of year. Our smoked ham is given a citrus mustard glaze, so it's smoky but sweet with just the right amount of bite. We couldn't, of course, stop there; we serve our smoked ham with a compote of apples and cranberries that have been soaked in orange juice. You get sweet and tart flavors, while the fruit is firm, yet tender. A perfect combination, overall.
