One of Vietnam's most famous dishes is the driving force behind one of our favorite creations for the spring.

Our inspiration: We wanted something light and cool for the summer, and Vietnamese cuisine was just what we were searching for.
The traditional noodle dish called "pho" (pronounced '"fuh") was the basis for our newest pasta salad.

Our method: We toss together the traditional "pho" ingredients of delicate vermicelli rice noodles, tender grilled chicken, basil, scallions, cilantro and a sweet chili-lime dressing, then put our own spin on it by adding fresh slices of cucumber and tomato.

Our tasting notes: The noodles are light, yet firm. The chicken is seasoned perfectly to be sweet, yet slightly spicy, and the tomato and cucumber is pleasantly crisp.

Our serving recommendation: Being a delicious combination of meat, pasta, and vegetables, our salad could easily be a meal all on its own, just as the Vietnamese dish that inspired it is self-contained. However, we imagine our "pho" fitting in nicely with the other salads at a picnic or barbeque.
