Our inspiration: This sizzling dish comes to us from Argentina, where beautiful slabs of steak are grilled in a tradition called asado. Rubbed simply with salt and/or garlic, meats are roasted to perfection and served with chimichurri sauce, a thick, green condiment made fresh with citrus juice, herbs and spices, and so prevalent in Argentina that it's the equivalent of ketchup in the United States.

Our method: We took all natural flank steak and marinated it in a sauce of parsley, lemon, cilantro, dried oregano and hot pepper flakes so it's tender and flavorful. We then grilled the steak to medium-rare perfection and finished it with more chimichurri sauce.

Our tasting notes: The steak is thick, tender, yet juicy, with that grilled flavor that makes a barbeque a necessity for summer eating. The chimichurri is the perfect accompaniment: tangy, savory, and spicy.
