Don't get us wrong. We love the typical tossed salad with its colorful mix of vegetables (and the occasional fruit), but for the start of a new season of great flavors, we felt that the spring deserved something unique.

The result of our efforts is our Three Pea Salad, a refreshing blend of crunchy sugar snap peas, crisp snow peas and tender sweet peas. The green flavors of the peas are balanced and enhanced by the inclusion of cool, clean mint and butter lettuce. The salad is then tossed with extra virgin olive oil that adds depth without weighing the delicate ingredients down.

Overall, this salad is light and refreshing, yet satisfying at the same time. We recommend serving it with our pesto-crusted salmon and our crispy Roman artichokes for a bright, invigorating taste of the season.
