Why Is Prime The Best?
Because of the high level of marbling that runs through the meat. When it's cooked, the fat melts and the meat is basted from within, creating that tender, juicy, buttery texture and flavor that's simply divine.
The Term "Fresh" Is Self-Explanatory, But What Exactly Does "Dry-Aged" Entail?
It is practically a lost art, a now-rare method of producing beef that is incredibly tender in texture and flavorful. Most cuts of beef are wet-aged, vacuum packed in its own juices. This process is definitely cheaper and easier to accomplish than dry-aging, but a robust taste is sacrificed. Since you know by now that taste comes first with Balducci's, naturally we sell dry-aged beef.
