Think of our fabulous rotisserie chicken getting a South American makeover.
Our inspiration: Peru is known for its incomparable grilled and rotisserie chicken, so we had to try our hand at it as well.
Our method: We started with quartered natural chicken and marinated it in cumin, coriander, oregano, red wine vinegar, lime juice, jalapeno and cilantro.
Our tasting notes: When it's roasted, the meat is nicely charred on the outside and juicy and tangy with a hint of mouth-watering smokiness on the inside. The garnish is a savory blend of toasted garlic, cilantro, red onion, and lime juice relish.
