Ethiopian Yirgacheffe
According to legend, coffee was discovered in Ethiopia nearly twelve hundred years ago. And the Yirgacheffe, which is picked by hand due to the berries on the plant all ripening at different times, is also considered by many to be the "cream" of the Ethiopian coffee crop. It is grown high in the mountains, in a very small area of the Sidamo region.

The unique taste is remarkably soft, smooth and rich while still maintaining a delicate side with a medium body, excellent balance, and a soft, perfume-like aroma. A winey, almost flowery taste is discernible. Part of this is due to the "wet" method used to treat the beans. After the pulp and skin of the fruit is removed, the beans soak in fermentation tanks for 72 hours. We roast these washed beans to medium in order to bring out all of the unique characteristics of this exquisite, surprisingly unrecognized African coffee. Yirgacheffe is the perfect exotic treat to serve with dessert after your feast.

Costa Rican Tarrazu
Costa Rica is one of Central America's finest coffee producers. The rich volcanic soil and mild Pacific climate of the Tarrazu region produces a coffee with bright acidity, full body and aroma, and a slight sweetness in the cup. Look for the subtle hints of spice and lush fruit, finishing with a slight smokiness.

Sumatran Mandheling
Mandheling is the finest growing region in Sumatra - itself one of the largest of the 13,700+ islands comprising the Republic of Indonesia. Grown near the port of Pandang in west-central Sumatra, the growing altitude of 2,500 to 5,000 feet is ideal for cultivating one of the world's finest gourmet coffees.

Known for its fantastically heavy body and almost syrupy richness, this coffee is low in acidity, with sweet earthy, herbal nuances and a mild herbal aroma that reminds us of autumn leaves.


Any of these coffees are wonderful with a slice of pie, pieces of chocolate, or just for savoring by themselves. Overall, they're the perfect ending to your Thanksgiving dinner.
