These hand-made 80 pound wheels are aged in the same caves as Emmenthal cheese and are one of the main ingredients in the classic Swiss fondue. It has a richer, much fuller flavor than other Swiss and French Gruyeres.
Why is cave-aging so important?
The conditions in a cave are warmer and more humid, creating that earthy, rich flavor that you can't get under normal conditions. The extra love and attention the cheese makers lavish on this gruyere makes it all worthwhile.
