Rolf Beeler is an eminent artisanal cheese maker, dedicating himself to creating and aging Swiss cheeses in the traditional sense. This production is small, but that's exactly the point: he focuses his energy and attention on creating a precious few treasures. Only raw milk is used, and under the proper conditions. Corners are not cut, because taste should never be sacrificed for economy.

Swiss Gruyere
Made from cow's milk, it has a nutty, slightly sweet taste with complex musty, mushroomy flavor notes. And, unlike some gruyere cheeses on the market, this one is aged 16 months in humidity, the way it was meant to be. Enjoy this gruyere with Syrah or Champagne, or blissfully melted as fondue.
Hoch Ybrig
A unique form that's pure Rolf Beeler, hoch ybrig has a rich, supple texture, dramatic earthy, musty aromas and a rich, nutty, mildly sweet flavor that can't be matched. While certainly it can be described as in the gruyere family, it's actually its own classification-hoch ybrig. In our humble opinion and for ease of description, it's the perfect gruyere. For a taste experience of many dimensions, I recommend enjoying hoch ybrig with a glass of our Grange Clinet.
