This Chilean cheese is a product of the Panquehue region of Chile - an extensive area of fertile land full of flavors and aromas. Panquehue is an indigenous word that means "Land of Water".
The "Land of Water" has definitely produced a cheese that reflects the beauty of Chile. Panquehue is a semi-soft cheese, similar to Havarti. It's a perfect cheese for cooking -- if you can stop yourself from snacking on it! It's mild, smooth, and creamy, so it appeals to a wide range of cheese lovers. And each variety has its appeal: the Traditional is simple and unadorned, perfect with crackers. Fresh Chives has the zesty, savory flavor of onion; we immediately thought of melting it on a burger fresh from the grill. Chilean Pepper is sweet, yet spicy -- very much like a Monterey Jack.
