Cultivated in Chile, and a particular favorite, Alfonso Olives are large and juicy with a deep purple color. The aubergine color is attributed to the olives being cured in red wine vinegar, along with sea salt and water. They have a firm, fleshy texture very much like a plum, and a slightly tart flavor. Alfonso Olives are perfect paired with salads, and are exceptional with Feta cheese. These are also excellent cooking olives because the tender flesh is easily separated from the pit.
