Once only available in the northwest area of the country, Beecher's Flagship is available on the east coast at Balducci's stores. This semi-hard cow’s milk cheese has a surprisingly bold, nutty flavor and is aged carefully for a year to create its lightly crumbling texture. Flagship reserve, in short, is given the "Old World treatment" that the Flagship is not. Reserve is wrapped in cheesecloth and left to age in the open air. The magnificent little bacteria that make cheese so heavenly in taste are allowed to go ballistic on the Flagship Reserve, and thus a great cheese is born.
About Beecher's Handmade Cheese
Beecher's Handmade Cheese is a fairly new endeavor, having been founded by entrepreneur Kurt Beecher Dammeier in 2002. However, the methods for making the tasty artisan cheeses have been around for thousands of years. Located in Pike's Place Market in Seattle, Beecher's is in a prime location with several large windows which allow customers to witness the making of the cheeses.
All of Beecher's cheeses are natural, with no bovine growth hormones in the milk and no hydrogenated oils, nitrates, or polysorbate.

In just the short amount of time Beecher's has been in business, they have won a plethora of awards. Here are just a few for Flagship Reserve specifically:
- Flagship was named the Best Semi-Hard Cow's Milk Cheese for 2007 by the American Cheesemaker Awards.
- In 2007 Flagship Reserve won 1st Place for Cheddar Aged 12 to 24 Months in the American Cheese Society awards.
- In the 2005 World Cheese Awards, Flagship was given the Bronze Medal in the Open Class for New Cheeses marketed in 2004 in a field of 15 entries.
