A fairly new addition to Sweet Grass Dairy, this aged cow's milk cheese is named after the dairy's home town. The most noticeable quality of this cheese is the very soft texture, which is created by putting the curds into molds while they are still fairly runny. The resulting cheese is a golden yellow color with a mellow, buttery taste and a tangy, lightly salty finish. The mild taste of Tomme means that you can serve it with a crisp and apple-y white wine or a dark, full-bodied red.

The goats and cows which produce the milk for the cheese enjoy a free-range, humane lifestyle, free of antibiotics or hormones.
