Grayson is an American cheese that will remind you of your European favorites. The soft, fine texture and square shape are similar to Taleggio from Lombardy with the pungent, spiciness of Normandy's Livarot. Grayson is very rich and beefy, but sweet as well, with a warm and toasty color like the shell of a pumpkin.

Pair this cheese with a spicy white wine like Gewurztraminer, a fruity red like Cabernet, or, better yet, get yourself some thick slices of country bread and make a grilled cheese sandwich you won't ever forget.
