A partnership formed over a decade ago between a physician and his former patient is now responsible for the production of some of the finest chocolate found in the California bay area. The packaging for these bars is rather stark (the logo features an ibex, a wild mountain goat famed for its ability to navigate and survive rough terrain), but the chocolate inside is elegant in its complexity. 41% Milk Chocolate- only organic milk from pasture-raised cows is used to make this bar, which must explain that wonderful caramel flavor and aroma we detected while tasting--caramel, without being overly sweet. Somehow it is able to be both dark and milky at the same time, and we love it!
41% Milk Chocolate Sea Salt Almond Bar--this one's new to our stores, and we're sure it will be around for a long time once all of our readers get their hands on it. The caramel-like milk chocolate is salted and mixed with roasted almonds. We just found it to be an ideal mix of flavors: sweetness and saltiness and earthiness hitting you all at once.
62% Semi Sweet Bar-we all agreed this is a great bar for anyone out there who wants intense chocolate without the sweetness. Much to our delight, the 62% is still smooth, with a refreshing fruitiness, but not milky.
62% Mocha Bar -62% Cacao Semisweet chocolate is mixed with finely ground Sumatran coffee beans mixed right in. The chocolate is smooth, yet slightly gritty, and redolent with that full-bodied deepness you can expect with Sumatra.
70% Bittersweet Bar-70% cacao leaves you with that fantastically dry feeling in your mouth after it's been bombarded with deep, ripe, bitter chocolate, but with an aroma and flavor of berries that's unique to Scharffen Berger. Smack your lips in satisfaction that something as dark, fruity, and tangy as this is out there!
