Wild Caviar
For generations people have known that the very best caviar in the world is Russian Caviar (now Kazakhstan, since the breakup). With the decline in fish in the Caspian it is getting harder and harder to find good caviar. Our Kazakhstani Caviar is one of the few quality types of wild sturgeon caviar left for a connoisseur to enjoy.
Balducci's Sevruga (Acipenser stellatus)
This small-grain pearl has a lovely briny taste and ranges in color from grey to black. Can be served by itself or with hors d'oeuvres (holds up in heat); great with chilled Russian vodka.
